Spike and Drusilla are two characters from the TV series Buffy The Vampire Slayer. They are vampires. Therefore, the sunlight burns them. So they stay in during the day and only venture out at night.
So when Paris dresses up to go out, at 11 PM, Rory mocks her plan by implying she must be out to meet a couple of vampires.
This is possibly the only reference to Buffy the Vampire Slayer on Gilmore Girls. But Gilmore Girls creator Amy Sherman-Palladino, who is credited with writing this episode, got her start writing for Roseanne, just as the creator of Buffy got his start. And they’re both storytelling virtuosos.
