In the episode “Ballrooms and Biscotti,” in reference to The Godfather.

Their original plan was to spend the whole week together doing lots of Gilmore girls stuff, before Rory moves away to live at Yale. A whole week leading up to “the day of all days, Godfather One, Two, and Three with extra showings of the Sofia death scene over and over as long as the Mallomars hold out.”

But Rory opens her mail and discovers that they don’t have a week. They have a day. And as the errands mount, buying stuff for Rory’s move to Yale, they have less time than that.

Finally, Lorelai tells Rory to go to Friday-night dinner, which Rory can’t get out of, while Lorelai finishes up the errands. “Meet me back here 9:30, 10 at the latest, and we’ll do Godfather I through ’Monday, Tuesday, Thursday,’ and a quick Sofia dying.”

“Monday, Tuesday, Thursday” refers to a scene in The Godfather, Part I. Michael Corleone moves to Sicily for a while, after shooting a drug lord and a crooked cop. There he meets Apollonia with whom he falls in love. He tries to teach her to drive, but it’s not going so well.

MICHAEL (in Italian): It’s safer to teach you English!

APOLLONIA (in Italian): I know English…
(then in English): Monday, Tuesday, Thursday, Wednesday, Friday, Sunday, Saturday… Andiamo!

It’s a touching scene, despite the fact that they are in grave danger, and they don’t even know it.

The “Sofia death scene” is the scene at the end of The Godfather: Part III, in which Mary Corleone gets shot. Francis Ford Coppola took a lot of flack for casting his daughter Sofia in a major role in that movie. He even took flack from the Gilmore girls.
